Quick and Easy Meals For One, Baked Salmon With Cherry Tomatoes and Roasted Vegetables.

Typically, when I cook dinner it's for three people, myself and my two kids. The past few weeks, however, I've found that there's a couple of days during the week when I eat alone as my son and daughter are either with their grandmother or have made other arrangements. To be honest, despite the fact that I just love my food, I often can't summon the energy to start preparing and cooking when the meals just for myself.
Enter my quick, easy and relatively healthy meal for one. Baked salmon fillet with cherry tomatoes and roasted vegetables. The dish literally takes under half an hour from start to finish, twenty of those minutes include cooking time and the preparation couldn't be easier. You can use any vegetables you choose, onions, courgettes or peppers, as long as those vegetables lend themselves to roasting. Wash the vegetables prior to cooking, but you can leave the skin on.
Ingredients.
2 salmon fillets.
1 Carrot, chopped.
1/2 parsnip, chopped about 1/2 an inch thick.
3 new potatoes, sliced about half an inch thick.
3 cherry tomatoes, halved.
2 garlic cloves, crushed. Or, if you're feeling really lazy, canned, crushed garlic as I have used.
Knob of butter.
1 tablespoon of oil.
Method.
Pre-heat the oven to gas mark 6. Place the chopped vegetables in a single layer on a large roasting tray. Brush the vegetables with a little oil as illustrated. Ensure that the vegetables have not been chopped too thickly, as the idea is that they will take roughly the same amount of time as the salmon to cook. Also, ensure that you save enough room on the baking tray for the salmon. Put the baking tray in the oven.
Preparing the salmon.
Plaice the salmon fillets on a piece of foil. Put the chopped cherry tomatoes on top of the salmon. Add the chopped garlic and knob of butter, then cover the salmon fillets with the corners of the foil and make a parcel. Add the parcel to the baking tray and turn the oven down to gas mark 4. Now go and put your feet up for twenty minutes or until the salmon has cooked through. Do not over cook the salmon as it will become too dry. The fillets should be a light pink colour. Serve and enjoy!

My mum always used to bake salmon with tomatoes and onion. I tend to buy cherry tomatoes, or baby plum tomatoes, because I think they have a more intense flavour. And, after my upbringing of salmon is always served with tomatoes, I can't eat it any other way. But, the choice is yours of course. I actually decided to write this hub after I'd chopped the veg (and I have a new camera, great first opportunity!)

Hi, Hollie. This sounds and looks delicious. I have never thought of cooking salmon with cherry tomatoes but it is definitely something I would be keen to try. Funnily enough, I am just about to make salmon for my dinner - but don't have any cherry tomatoes!
